Selenium speciation in foods and food supplements

The course combines lectures, which give a broad as well as a specific introduction to selenium speciation, with hands-on practice in the laboratory using HPLC hyphenated with inorganic and organic mass spectrometry. The course explains the biological and biochemical background to selenium speciation and will be conducted in an interactive manner between the lecturers and the participants.

Program

1st day (9.00-17.00 hrs):

  • Welcome, presentation and introduction to the course
  • Why carry out selenium speciation analyses in the food area? (lecture)
  • Extraction methods, including species stability (redox and enzymatic conversions) (lecture)
  • Lunch break
  • Laboratory practice I. Sample pre-treatment and extraction using selenium enriched garlic as test sample

2nd day (9.00-17.00 hrs):

  • A comprehensive introduction to selenium speciation by HPLC-ICP-DRC-MS (lecture)
  • Qualitative and quantitative analysis, calibration, precision, accuracy (lecture)
  • Lunch break
  • Laboratory practice II. Analysis

Please understand that the number of participants is very limited and therefore early registration is recommended.
